Hi everyone! I hope you're all having a lovely day. Today, I'm going to share with you this super simple and easy blueberry oatmeal recipe. As all of you might know by now, I love oatmeal A LOT! Most of the time, I always make myself oats and never get bored of it. I always like to change things up, mix flavors, and recently, I've been loving adding blueberries to my oatmeal... gives it such a nice color once you mix everything together! I'm not gonna let you wait too long... here's how to make it!
y o u w i l l n e e d :
oatmeal:
1/2 cup quick oats
3/4 cup water
1/4 cup plant-based milk (I used almond milk)
1/2 tsp ground flaxseeds
1/2 tsp whole chia seeds
blueberry part:
1/2 cup frozen bluberries
1-2 tbsp water
toppings:
1 tsp whole flaxseeds
1/2 banana (sliced)
s t e p b y s t e p :
1. In a small pot, add all the oatmeal ingredients (oats, water, plant-based milk, flax and chia seeds) and cook on low-medium heat until the oats are cooked and absorbed the liquid (about 2 minutes).
2. While the oatmeal is cooking, in a small pan, add the frozen blueberries and water on medium heat until the blueberries defrost and start to get very soft (about 3 minutes).
3. Add the oatmeal in a bowl, the blueberry mixture and top with whatever you prefer and already have at home. I choose to top my oatmeal with banana slices and whole flaxseeds. Coconut flakes would be an amazing topping option as well.
