Quick and Easy Banana Pancakes


I don't know about you, but I can't think of a better way to start a Saturday or Sunday mornings with simple and delicious vegan pancakes. There's something about this breakfast/brunch that is just so appealing and motivating when you want to start the weekend well. Today, I'm going to share with you this really easy banana pancakes recipe that I'm sure you'll fall in love with! This is probably the simplest pancake recipe to make since you simply have to put all the ingredients in a blender and mix. Even though mixing pancake batter in a blender might sound a bit weird, it's actually one of the easiest and quickest way to get a really smooth batter, without lumps!

As you all know, I always make oil-free recipes but this time, I added coconut oil in the ingredients list, but that's only if you do not own a non-stick pan. If you have one, than you can easily leave the oil out of the recipe just like I do. When cooking the pancakes, if you feel like they're sticking to the bottom of the pan, than just add a little bit of coconut oil when cooking the next batch.

y o u  w i l l  n e e d :


1/2 ripe banana
3/4 cup flour
1 cup rolled oats
1 cup plant-based milk
1 tsp baking powder
1 tsp cinnamon
Coconut oil to grease the pan (optional)


s t e p  b y  s t e p :


1. In a blender, add all the ingredients until it reaches a smooth consistency without any lumps.

2. In a pan, heat a very small amount of coconut oil and add about 1/4 to 1/3 cup of the batter and cook the pancake on both size until golden brown. Repeat until there's no more batter left. Now, top with fresh maple syrup and your favorite fruits.
